Corn Massacre 2008

Ah to be an unsuspecting ear of corn, happily nestled in your husk in a sunny field, enjoying the sun, the water, and fresh air. And then one day, when the sky is blue and the birds are singing, you are mercilessly ripped from your home and thrust into the blinding light of day. To add injury to insult, you are callously tossed into a box with many others of your kind and bounced to and fro to an unknown destination.
It is a long journey, and a crowded one. You finally stop and are taken inside a structure that is not as warm as the air of the field. There are strange sounds all around you.

To think, up until this very moment, the only threat you were truly afraid of came in the form of the small corn worms that are so common in the field. You have learned that are greater threats in this world then the squirmy, smooth creatures of the fields.
And now begins the medieval torture chamber. You are boiled in hot water.
And then immersed in freezing water. Just when you think you can't stand any more temperature extremes....
You are nestled on a soft towel and allowed to sit for awhile. The worst is yet to come however....
No words can express.....

Cheese Stuffed Tomatoes

1 large tomato
salt and pepper
1/2 cup ricotta cheese
flat-leaf parsley, chopped
1 garlic clove, chopped
green onion, chopped
1/8 cup + 2 teaspoons Parmesan cheese
1 egg white

Cut the tomato in half and scoop out the insides using a melon-ball scoop. Season the insides of the tomatoes with salt and pepper. Mix the rest of the ingredients together well and divide between the tomato cups. Bake in a preheated oven (450 degrees) for 20 minutes, or until tops are golden.

Butterbur's Quick Fix Garden Patch Pizza

Ah, veggies. A nice diversion for the palate.
Makes 1 serving.
  • 1 slice whole wheat or other whole grain bread
  • 1 wedge of Laughing Cow Cheese (Swiss)
  • 1 carrot, shredded
  • 1- 2 Tbsp chopped red onion
  • 1- 2 Tbsp chopped green pepper
  • A couple of broccoli florets, chopped into tiny pieces
  • Chives
  • Red Wine Vinegar
  • Salt and Pepper
  • Olive Oil
1. Toast bread. Spread cheese evenly on bread.
2. Combine all veggies in a bowl. Add a splash of vinegar and oil. Season to taste with salt and pepper and chives.
3. Top toast and cheese with veggie mixture and spread evenly.
4. Vegify.
